Cheese flavours: make your choice!
La Fromagerie opened its doors on 7 November 2020 and has been constantly developing its range, selecting cheeses from France's gastronomic heritage and a few references from our European neighbours.
You will be welcomed by Laurence, who has been a creamer-cheesemaker since 2020 following a professional retraining and solid training with the Fédération des Fromagers de France.
A passionate cheese-maker, Laurence will be showcasing the French region and introducing you to cheeses from local farms: the Pralong farm in Puy St Pierre, the Brunet farm in Cervières, the Molières farm in La Grave, the Plampinet goat dairy, the Eibans farm in Vallouise, the Durance cheese dairy in Guillestre, the Coopérative laitière des Alpes du Sud and the Château Queyras cheese dairy. And let's not forget the Miellerie Jacques Bordet in Névache, the jams and syrup made by "Le Plantivore", an artisan picker in Château Ville Vieille, and the Liqueurs d'Isabelle, a farmer in Freissinières.
You can count on her expert advice on wine pairings, flavour palettes, choice of ripened or fresh cheeses, pressed cooked and uncooked cheeses, creaminess, character...
Enthusiastic, she will help you make your choices and give you invaluable advice on finding the right combination of flavours to suit your tastes.
7 different raclettes are on offer, as well as Savoyard and Swiss fondues prepared to order.
You can also enjoy "la fondue Briançonnaise" thanks to the morel, porcini or forest fondue preparations made by a Briançonnais restaurateur, a preparation that is unique in Europe and will surprise you with its unrivalled taste.
Trays are available for special events or festive meals, always in a spirit of discovery and sharing.
