Cheese flavours: make your choice!
Pressed cooked, uncooked, washed-rind, blue-veined, bloomy-rind, goat's milk, ewe's milk...
The Cheese Dairy opened its doors on 7 November 2020 and has continued to develop its range by selecting cheeses from France's gastronomic heritage and a few references from our European neighbours.
You will be welcomed by Laurence, creamer-cheesemaker since 2020 following a professional reconversion and a solid training with the Federation of Cheesemakers of France.
Passionate, she honours the French territory while allowing the discovery of cheeses from local farms: Pralong farm in Puy St pierre, Brunet farm in Cervières, Molières farm in La Grave, the goat farm in Plampinet, Eibans farm in Vallouise, the Durance cheese factory in Guillestre, the Coopérative laitière des Alpes du Sud and the cheese factory in Château Queyras Let's not forget the Miellerie Jacques Bordet in Névache, the jams and syrup "Le Plantivore" artisan picker in Château Ville Vieille and the Liqueurs d'Isabelle, farmer in Freissinières.
You can count on her sound advice, association with wines, palettes of flavours, choice of ripened or fresh cheeses, pressed cooked and uncooked cheeses, smoothness, character...
Enthusiastic, she will accompany you in your choices and give you precious advice to find the association of flavours that will meet your desires.
7 different raclettes are proposed, Savoyard fondue and Swiss fondue prepared on request.
You can also taste "la fondue Briançonnaise" thanks to the preparations for morel, cep or forest fondue elaborated by a Briançonnais restaurateur, a unique preparation in Europe which will surprise you with its unequalled taste.

Trays will be suggested for special events or festive meals, always in a spirit of discovery and sharing.
Reservations are recommended, so don't hesitate to drop in at the Cheese Dairy.

For the past few months, the Cheese Dairy has been offering tasting workshops on the 3rd Thursday of each month. Production, maturing, history, cutting, a real immersion in the cheese world. Reservation required.
